Future Apples...


Wow!  There are a million blossoms on our apple tree this year.  I am already overwhelmed thinking of how much applesauce this will make.  I still have a pantry full of applesauce from last year and there were half as many blossoms.

Fun Weekend...


Susan and Marty spent the weekend with us.  Being born and raised in the city, Marty was quite expressive in his delight of our birds, too much food and the darkness of the night.  Being born and raised in the country I take all of this for granted.  I shouldn't.


About ten minutes from our farm is Hamilton Falls.  This miracle of nature would impress anyone.



With our abundance of rain, the water was roaring down this mountain stream and over the falls.  I was so happy to be able to walk through the woods again.  At least I will never take that for granted.

Concord, NH...


We took the camper over to New Hampshire today to get the wheel wells replaced after our tire blow outs last fall.  On the way home we drove through downtown Concord.  This is the capital building, looking into the sun, sorry.

Quilt Challenge...



Our challenge this time was 2 1/2 inch strips of solid fabric.  This is Gina's quilt and it won the prize for Best in Show.


Everyone brought a covered dish to pass.  Most excellent!

Shortbread...


A few years back my sister, Sandie, was visiting from Hawaii.  In our travels around Vermont she came upon these cookies, well, not actually these cookies.  She paid $6 for a package of 6 cookies.  YIKES! I got to taste them and boy were they good.

I never buy cookies especially at that price so I decided to see if I could replicate them.  This recipe is what I came up with and they are very close if not exact.  See what you think:

Oatmeal Shortbread


1 Cup of butter
½ Cup brown sugar (packed)
1 Tsp. Vanilla
1 Cup all-purpose flour
½ Tsp. Soda
2 Cups Bob’s Red Mill Oats

Mix butter, sugar, and vanilla until fluffy. Measure flour by dipping method. Blend flour, soda, and oats; stir into butter mixture.

Heat oven to 350 degrees. Roll dough ¼ inch thick on lightly floured board. Cut in squares. Bake on ungreased baking sheet for 10 minutes.

I would normally chill shortbread dough for an hour but in this case, because of the oats, chilling will make it difficult to roll and cut.

Mom...

Happy Mother's Day Mom.


I can't spend the day with her today.  She lives on the Cape and I live in Vermont. 

At church this morning we talked about our moms.  One of the things she gave me as a child is faith.  She took us to church every Sunday and instilled in us the importance of something bigger than us in control of childish fears and expectations.

Faith is the bird sensing the light, singing his song before dawn.
